Instructions
  • Wash all of your vegetables and chop them into thick slices
  • Layer the veggies in a large pot  eggplant then tomatoes then zucchini, throwing in the garlic, olives, and basil and a sprinkle of salt and pepper as you layer
  • Cover and simmer on low heat for 2-2.5 hours, add in the pasta sauce at about an hour if you want
  • Season with fresh basil and salt and pepper before eating.
Ingredients: 
  • 1 Large Eggplant
  • 2 Large zucchini's
  • 4 Cloves of Garlic (Maybe even 5, use a lot of Garlic)
  • 4-5 Deep red Roman Tomatoes
  • 1/2 Cup fresh Italian Parsley or Basil or both
  • Black Pepper (Fresh Ground Pepper, use a lot)
  • Salt ideally sea salt (just a dash)
  • 4-6 Kalamata olives, pitted and diced (optional)
  • 1/2 jar of pasta sauce or diced tomatoes (again optional, for a stronger tomato taste)
