1. In large bowl combine lentils,cheese,peppers,onions & garlic.

2. In small bowl whisk together lemon juice,olive oil,thyme, sale & pepper.

3. Pour dressing over lentils and toss to coat.


19 oz can lentils, drained (540ml)
4 oz low fat feta, crumbled (125g)
1 red bell pepper, chopped
2 green onions, thinly sliced
1 clove garlic, minced
2 tbsp fresh lemon juice (30ml)
1 tbsp olive oil (15ml)
1/2 tsp dried thyme (2ml)
salt & pepper to taste
