Information Preparation and Cooking Time: 20 minutes Serving: 4-6 Nutrition Food Groups: Vegetable Instructions Ingredients: 1 Large Eggplant 2 Large zucchini's 4 Cloves of Garlic (Maybe even 5, use a lot of Garlic) 4-5 Deep red Roman Tomatoes 1/2 Cup fresh Italian Parsley or Basil or both Black Pepper (Fresh Ground Pepper, use a lot) Salt ideally sea salt (just a dash) 4-6 Kalamata olives, pitted and diced (optional) 1/2 jar of pasta sauce or diced tomatoes (again optional, for a stronger tomato taste) Instructions: Wash all of your vegetables and chop them into thick slices Layer the veggies in a large pot eggplant then tomatoes then zucchini, throwing in the garlic, olives, and basil and a sprinkle of salt and pepper as you layer Cover and simmer on low heat for 2-2.5 hours, add in the pasta sauce at about an hour if you want Season with fresh basil and salt and pepper before eating.
