Apple Buttermilk Muffins

Makes 12 muffins If you're going to eat a muffin, make it a great tasting one. These wonderfully moist muffins almost taste lie eating a slice of apple pie and ice cream. And, you can make them portion-wise instead of jumbo!

Instructions
Ingredients: 

1/2 cup butter (125 ml)
1/2 cup packed brown sugar (125 ml)
1/4 cup liquid honey (50 ml)
2 eggs
1/2 tsp vanilla extract (3 ml)
1/4 tsp salt (1.5 ml)
1 tsp baking powder (5 ml)
1 tsp baking soda (5 ml)
1 tsp cinnamon (5 ml)
1/2 cup buttermilk (125 ml)
1.5 cups flour (375 ml)
2 apples, peeled, seeded and cut into small chunks
1/2 cup chopped pecans (125 ml)
(If you do not want to use nuts, try adding 1/2 cup of raisins or dried cranberries).

Instructions: 

1. Preheat oven to 375 degrees F (190 C). In a mixing bowl, cream butter until smooth. Add brown sugar and honey. Add eggs, vanilla, scrape bowl. Add salt, baking powder, baking soda and cinnamon. Alternately add flour and buttermilk. Add chopped apples and pecans and mix until combined.

2. Spoon batter into prepared muffin cups, filling 2/3 full. To garnish, place a few chopped apples or pecans on the top of each muffin, before putting into oven.

3. Bake for 20 - 25 minutes or until toothpick inserted into centre of muffin comes out clean. These muffins are delicious served warm.

Store muffins in refrigerator for four days or freeze for up to a month.
